Best Southwestern Casserole

This Best Southwestern Casserole is a hearty main dish full of Tex-Mex flavor!

1 1/2 lbs. uncooked chorizo or bulk spicy pork sausage

1 small onion, chopped

1 15 oz. can black beans, rinsed and drained

1 15 oz. can tomato sauce

1 11 oz. can Mexicorn, drained

2 4 oz. cans chopped green chilies

1 cup salsa or homemade recipe here

1/4 cup minced fresh cilantro

3 tsp. each ground cumin, chili powder, paprika

2 tsp. garlic powder

12 6 inch corn tortillas

2 large tomatoes, sliced

2 cups shredded monterey jack cheese

Preheat oven to 375 degrees.

Crumble chorizo into a large skillet, add onion. Cook over medium heat until meat is no longer pink, drain.

Add beans, tomato sauce, corn chilies, salsa, cilantro and seasonings, heat through.

Place six tortilla in the bottom of a greased 13 x 9 inch baking dish.

Layer with 3 1/2 cups meat mixture, tomatoes and 1 cup cheese. Top with remaining tortillas, meat mixture and cheese.

Cover and bake 40 minutes. Uncover, bake 5-10 minutes more.

Let stand 10 minutes before cutting and serving.
