Beef Beer Goulash

This Beef Beer Goulash makes a  wonderfully delicious meal!

1 Tbsp. butter

2 1/2 lbs. beef stew meat

3 tsp. salt, divided

3 tsp. pepper, divided

1 onion, diced

1 celery rib, diced

1 carrot, diced

3 cups dark beer

2 Tbsp. tomato puree

2 bay leaves

5 juniper berries

parsley for garnish

Heat half of the butter in a large pot or Dutch oven.

Add the beef, in batches, browning all sides of the meat.

Season with 1 tsp. salt & pepper.

Transfer the beef to a bowl and set aside. Clean the pot.

In the same pan, heat remaining butter, add the onion, celery and carrot. Cook until softened. Add the beer.

Scrape off the browned bits on the bottom of the pan.

Add in the seared beef, tomato puree, bay leaves, juniper berries and 2 tsp. each of salt & pepper.

Bring the stew to a boil, cover, and simmer for 2-4 hours or until beef is tender.

Serve topped with parsley and Garlic Smashed Potatoes.
