Barley Beef Skillet

Barley Beef Skillet makes a meal the whole family will enjoy! Spice it up with chili powder or cayenne if you want to heat it up.

1 lb. lean ground beef

1/4 cup chopped onion

1 clove garlic, minced

1 14.5 oz. can reduced sodium beef broth or homemade recipe here

1 8 oz. can tomato sauce

1 cup water

2 small carrots, chopped

1 small tomato, seeded and chopped

1 small zucchini, chopped

1 cup medium pearl barley

2 tsp. Italian seasoning

1/4 tsp. salt

1/8 tsp. pepper

In a large skillet, cook beef and onion over medium heat until meat is no longer pink.

Add garlic and cook 1 minute longer. Drain. Add broth tomato sauce and water, bring to a boil.

Stir in remaining ingredients. Reduce heat, cover and simmer 45-50 minutes or until barley is tender.

Add Mother’s Dinner Rolls for a complete delicious meal.
