Banana Nut Bread

This Banana Nut Bread is so delicious, make sure to wait for your bananas to get spotted and soft before use!

2 cups all purpose flour

3/4 tsp. baking soda

1/2 tsp. salt

1/2 cup butter, softened

1/2 cup sugar

1/2 cup brown sugar

2 large eggs

1 1/2 cups mashed very ripe bananas (4 medium)

1 tsp. vanilla extract

1 cup walnuts or pecans, chopped

Preheat oven to 325 degrees. Evenly grease an 8 x 4 inch loaf pan.

In a medium bowl, whisk flour, baking soda, and salt.

In a large bowl using an electric mixer at medium speed, beat butter and sugars together until light and fluffy.

Beat in eggs, one at a time.

Reduce speed to low, alternately add flour mixture and banana mixture, beginning and ending with flour mixture, occasionally scraping sides of bowl.

Beat just until blended.

Pour batter into prepared pan. Bake about 1 hour or until a toothpick inserted near center comes out clean.

Cool loaf in pan on wire rack about 10 minutes.

Remove bread from pan and let cool completely on wire rack.

Makes 16 slices
