Baked Spinach Mushroom Quesadillas

These Baked Spinach Mushroom Quesadillas are crispy, delicious and healthy! Give this one a try for dinner tonight and double recipe if necessary.

4 8 inch flour tortillas

olive oil

8 oz. sliced mushrooms

1 cup shredded mozzarella

1 cup shredded cheddar

3 cups roughly chopped spinach

Preheat oven to 400 degrees.

Place the mushrooms in a microwave safe bowl, and microwave for 2 1/2 to 3 minutes to soften. Drain the mushrooms and set aside.

Lightly brush one side of each tortilla with olive oil and place on a baking sheet, oiled side down.

Evenly distribute the mushrooms, spinach, mozzarella and cheddar evenly over half of each tortilla and fold the other half over top.

Bake tortillas about 6 minutes, flip each over and bake for another 6-7 minutes or until cheese is melted the outside of tortillas are brown.

Makes 4 servings
