Baked Overnight Pumpkin French Toast

Baked Overnight Pumpkin French Toast is so easy to make and is a great idea for holiday gatherings. Just make the day ahead and bake when ready!

3 eggs

1 cup milk

1/2 cup canned pumpkin puree

1/4 cup pure maple syrup

1 tsp. vanilla extract

1/2 tsp. cinnamon

1/8 tsp. nutmeg

6 thick slices French Bread

In a medium bowl, whisk together eggs, milk, pumpkin, syrup, vanilla, cinnamon and nutmeg until smooth.

Place French bread in a single layer in a well-greased 9 x 13 inch pan. Pour egg mixture evenly over top. Flip bread and move it around pan to evenly distribute the egg mixture.

Cover in plastic and refrigerate at least 3 hours or overnight.

Preheat oven to 375 degrees. Remove pan from the refrigerator, uncover and bake 30-40 minutes or until outside is golden brown and inside is set.

Serve with whipped cream and maple syrup, if desired.
