Baked Chinese New Year Cake

Make this Baked Chinese New Year Cake to enjoy, it is light and delicious!

2 Tbsp. shredded, sweetened coconut

4 large eggs

1 lb. sweet rice flour

3 cups whole milk

2 1/2 granulated sugar

3 Tbsp. unsalted butter, melted

1 tsp. coconut extract

1/4 tsp. fine salt

Heat oven to 350 degrees. Arrange a rack in the middle of the oven. Coat a 13 x 9 inch baking dish with butter. Set aside.

Place coconut in a single layer on a baking sheet, bake about 5 minutes or until coconut is toasted and golden brown. Set aside.

Place eggs in a large bowl and lightly beat to break up yolks. Add remaining ingredients and whisk until smooth.

Pour mixture into prepared pan and bake 25 minutes.

Sprinkle with toasted coconut, rotate pan and bake about 20-25 more minutes or until edges are just starting to brown and the top is  just set.

Remove and let cool 30 minutes before serving.

Wrap left overs tightly with plastic wrap and refrigerate.
