Applesauce Nut Bread

This Applesauce Nut Bread tastes wonderful with served with butter or honey.

1/2 cup shortening

1/4 cup sugar

2 eggs

1 tsp. vanilla extract

2 cups white flour

1 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. nutmeg

1 cup applesauce, preferably chunky

3/4 cup chopped walnuts

Preheat the oven to 350 degrees. Butter a 9 x 5 inch loaf pan.

In a large mixing bowl, cream together the shortening and sugar.

Add the eggs and vanilla to the sugar mixture and mix well.

Sift together the flour, salt, baking powder, baking soda, cinnamon and nutmeg and add to the egg and sugar mixture.

Stir well to blend. Stir the applesauce and walnuts into the batter.

Spread the batter into the prepared loaf pan and bake 50-55 minutes.

Remove from the pan and cool on a wire rack.

Makes 1 loaf
