Apple Walnut Spice Cake

This Apple Walnut Spice Cake makes an awesome dessert, frosted with brown sugar cream cheese frosting!

4 cups Granny Smith Apples, cored, peeled and chopped

2 cups sugar

1/2 vegetable oil

2 eggs, lightly beaten

1 tsp. vanilla

2 cups all-purpose flour

2 tsp. baking powder

1/2 tsp. baking soda

2 tsp. cinnamon

1/2 tsp. nutmeg

1 tsp. salt

1/2 cup milk

1 cup walnuts, coarsely chopped

1-8 oz. package cream cheese, room temperature

1/4 cup butter, softened

2 tsp. vanilla

1 cup golden brown sugar

Preheat oven to 350 degrees. Butter and flour a 9 x 13 inch baking pan, tapping out excess flour.

Combine apples and sugar in a large mixing bowl. Add in oil, eggs and vanilla. Stir to combine.

In a separate bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and salt. Add this to the apple mixture. Add milk and stir to combine. Stir in walnuts.

Spread batter into prepared baking pan and bake 30 minutes or until a toothpick inserted near center comes out clean.

Let cake cool and make frosting: Beat  cream cheese until smooth, add butter and continue beating. Mix in vanilla and brown sugar, beating until sugar has dissolved and frosting is light and fluffy.

When cake has completely cooled, frost with brown sugar cream cheese frosting. Sprinkle additional chopped walnuts on top for garnish.

Refrigerate once cake is frosted.
