Spanish Rice

This Spanish Rice is a great comfort food.  Serve it up for dinner tonight with Mexican Green Beans!

1 lb. lean ground beef

1 large onion, chopped

1 medium green pepper, chopped

1 15 oz. can tomato sauce

1 14.5 oz. diced tomatoes, drained

1 tsp. ground cumin

1 tsp. chili powder

1/2 tsp. garlic powder

1/4 tsp. salt

2 2/3 cups cooked brown rice

In a large skillet, cook beef, onion and green pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles, drain.

Stir in tomato sauce, tomatoes and seasoning, bring to a boil. Add rice and heat through, stirring occasionally.

Serves 4
