Homemade Condensed Cream of Chicken Soup

Homemade Condensed Cream of Chicken Soup is much healthier than using the canned soup. Make this up a day ahead or freeze it up to 2 months.

3 Tbsp. butter

1/2 cup flour

1 1/2 cups chicken stock-homemade recipe here

3/4 cup milk

1/2 tsp. salt

1/4 tsp. paprika

1/4 tsp. garlic powder

1/4 tsp. onion powder

1/4 tsp. ground black pepper

1/8 tsp. dried thyme (oregano or parsley works to)

Melt butter in a medium saucepan over medium heat. Add flour and stir to combine. Reduce heat to medium-low and cook for 3 minutes. Remove from heat and pour in about 1/2 cup chicken stock, whisk and return to stove top on medium-high heat. Add remaining chicken broth, milk and spices. Continue to whisk so mixture doesn’t burn. Stir until mixture becomes thick, like tomato sauce. Remove from heat. As soup cools it will thicken more and consistency will be like condensed soup.
